Banana Oat Protein Pancakes

Making pancakes doesn’t have to feel daunting!
You don’t have to mix dry ingredients and wet ones separately. And you don’t have to read a long story about how much I love pancakes, before getting to my recipe.

Ingredients:

3 eggs

2 bananas
-
4 heaping tablespoons rolled oats

1 tsp baking powder

1/2 tsp stevia powder (or vanilla extract)

2 scoops protein (40-50g protein)

1/4 cup filtered water or milk/milk alternative

2 cups berries (blueberries recommended)

Natural/organic Maple syrup (recommended)
Directions:

Blend everything in a blender.

Heat a skillet or frying pan to medium-low and add butter (or a neutral oil like avocado oil or a light olive oil) to the pan.

Pour (approx. 1/3 cup) scoop of batter to the pan to form 4 inch circles OR simply pour batter directly from the blender, to form the size and shape of your liking.

Cook for 1-2min per side.

Garnish with 1 berries per plate and serve with real maple syrup. (Out of maple syrup? Alternative Option: Serve with a sauce made of 1 part honey and 2 parts yogurt for some added protein.)
